Fresh Homemade Cheese

1 lt fat milk if possible of the day
2 tbsp lemon juice or white vinegar
1 plain natural yogurt
salt flower to taste
Heat the milk to 90º, use a kitchen thermometer preferably, if none is available, stir the milk and turn off the stove before it begins to boil.
Add the lemon juice and yogurt to the milk and stir gently, let the mixture stand for about 3 hours.
Pour the preparation into a thin strainer or small cotton cloth and let it drain.
Put the curd in a container and refrigerate for about 30 minutes to stand.
Remove the container from the fridge and add the spices, in this recipe we suggest salt flower, but if you prefer you can also add your favorite herbs, garlic powder, pepper, etc.
Put back in the fridge for another 8 hours and it is ready to be consumed within the next 3 days.
Serve your freshly baked toasted cheese, toasted bread, topped with peanut butter or your favorite sweet. Enjoy your food!
