Pão de Ló de Ovar | Portuguese recipe

Pão de Ló is a typical Portuguese sponge cake! This one in specific is traditional from the Ovar region.

Imagine a common “British” sponge cake but with more eggs and an almost liquid centre. It’s so nice and gooey! Full of flavour! Fluffy on the sides and with an egg yolk creamy interior. I could eat 20 of these in one day! haha

INGREDIENTS:

– 2 Eggs
– 6 egg yolks
– 100g sugar
– 50g flour

Step 1 :

Pre-heat your oven to 200ºC.

In a big bowl start by joining the egg yolks, with the eggs and the sugar. Beat them together in a high speed until the mixture looks whiter and very foamy.

Step 2 :

Add the baking powder to your flour and using a strainer start adding the flour to the mixture, little by little.

It’s very important that you involve the mixture slowly and with down to top movements so it keeps being foamy. In the end, you should have a fluffy thicker mixture.

Step 3 :

Now you will need to line a baking tin with some greaseproof paper. I like to cut out the extra bits of paper that come out the tin so it’s evener.

Then grab a tiny piece of butter and spread it over the interior surfaces of the tin/paper.

Step 4:

Pour the mixture into the tin and take it to the oven at 200ºC for about 10 min.

You will know when it is ready if you stick a wooden stick on the edges and it comes out dry, and if you stick it in the middle it comes out wet.

The time it stays in the oven it’s the most important. If you leave it there for too long it will turn into a normal sponge cake and will lose the liquid centre.

Step 5 :

When it’s time to take it out of the oven it might not look ready to you, but it probably is. It will be very wobbly!

You can take it out of the tin but let it cool down for a few minutes with the greaseproof paper still on!

Keep it out of the fridge with only a kitchen towel or paper covering it. (Do not keep it on a closed box)
