200 gr santola crumb
1 tbsp cream
1 tbsp mayonnaise
1 tbsp chopped pickles
1 cup dry port wine
1 cup dry Madeira wine
1 brandy cup


boiled egg yolk eggs
Chopped parsley


Mix all ingredients in a bowl.
After everything is well mixed, fill the shell of the santola and garnish with capers, undone boiled egg yolk and chopped parsley.


This recipe can be made in exactly the same way with a crab. Keep the carapace for use at the time of serving.

Serve this snack in santola’s own carapace with toasts and a white or chilled green wine.
